What You'll Need (makes 6–8 pancakes)

2 scoops Elevate Organic Protein Powder (vanilla works beautifully here)

2 large eggs

½ cup milk of your choice

½ cup rolled oats, blended into a fine flour

1 teaspoon baking powder

1 teaspoon pure vanilla extract

A pinch of sea salt

Coconut oil or grass-fed butter for the pan

Optional toppings: fresh berries, raw honey, pure maple syrup, sliced banana, a dollop of almond butter

How to Make Them

Start by blending your rolled oats into a flour; a regular blender or food processor works perfectly. This takes about 30 seconds and gives your pancakes a light, fluffy texture without any store-bought flour needed.

In a bowl, whisk together your eggs, milk, and vanilla extract until combined. Add in your protein powder, oat flour, baking powder, and sea salt. Stir until you have a smooth batter. If it feels a little thick, add a splash more milk. Protein batters can vary depending on the powder, so don't be afraid to adjust.

Heat a non-stick pan or cast iron skillet over medium-low heat — lower than you think you need. Protein pancakes cook a little differently than regular ones, and patience is your friend here. Add a small amount of coconut oil or butter to the pan.

Pour roughly ¼ cup of batter per pancake. Wait until you see bubbles forming across the surface and the edges look set before you flip, or about 2 to 3 minutes. Flip once and cook for another minute or two on the other side.

Making It Work for Your Week
