All cow's milk has protein in it. One of the main proteins is called beta-casein, and it comes in two versions: A1 and A2.

Here's the simple version: A1 and A2 milk look almost identical, but they behave differently once they're inside your body. When your gut breaks down A1 protein, it produces a byproduct that some people's digestive systems don't love. That byproduct has been linked to bloating, discomfort, and that general "dairy doesn't sit right with me" feeling.

Why Don't All Cows Produce A2?

They used to. Originally, all cows produced A2 milk. Over time, and especially as large-scale commercial dairy farming took over, the breeds that produce the most milk (like Holsteins) also happened to carry A1 genetics. That's just what became the standard.

A2 milk comes from older breeds like Guernseys and Jerseys that kept the original genetics. Or from herds that have been tested specifically to confirm their A2 status.

What Does This Mean for You?
